Homemade Granola

This is one of my favorite easy breakfasts that the entire family enjoys. I have to admit, I have only made it once because Trey is so much more efficient that I am in the morning.  Every since we started making this years ago, we have never bought granola again! It is so easy to make, has protein, complex carbs, fiber, healthy fat and honey for sweetness and taste delicious. I like to pair it with low fat greek yogurt for even more protein and frozen blueberries.

Ingredients: 

  • 6 cups rolled oats
  • 3/4 cup melted coconut oil
  • 1 1/2 cups sliced almonds
  • 3/4 cups ground flaxseed
  • 3/4 cups chia seeds
  • 1/8 cup melted honey (can use more to help it all clump together more)

Directions:

  1. Preheat oven to 300 degrees
  2. Add all the ingredients into a large bowl
  3. Mix it all up (kids love this part)
  4. Distribute evenly on a large baking sheet
  5. Bake for 30 minutes or until golden brown, stirring at least once
  6. Serve with your favorite milk or yogurt with fresh berries or frozen (kids like this part even more!)
  7. Enjoy!

Options: You can sub out or swap out the almonds, chia seeds or flaxseeds. Other options can be hemp seeds, pumpkin seeds, your favorite nut, etc.
